Two Part Electronic Cutter Demo:*
Use your electronic cutter to its fullest advantage when it comes to creating designs for your cakes. Use your edible image printer to add interest to your gum paste by printing designs directly on to it. On day 1, I will demonstrate everything from preparing the gum paste through printing on both sides. Then, on day 2, I will show you how to use the printed gum paste and the Silhouette cutter to create 3 dimensional sugar pieces. This is sure to enhance your cake decorating! Don't miss this class!

Class 1. Wired Gelatin Flowers and Butterfly Bouquet
In this demo, Judi shows how make lovely flowers that look like blown glass, simply by dipping shaped wire into gelatin. This style of gelatin flowers is faster to start working with and the wires can hold amazing shapes for petals and leaves. Formers for wire can be as intricate as gumpaste cutters, or as simple as a bottle of gel color. You can then take wiring into the jewelry realm by using different kinds of pliers to form unique fillers for any type of bouquet. Flowers can be clear, opaque, pearlized or glittery depending on what you need. These are flowers that anyone can do if you have a box of Knox!

For the first hour of this demo, Judi will show some of the Beyond Ribbon Flowers that she did at the San Diego ICES convention. She shows how to add texture to the fondant ribbon ‘fabric’ for a fun, fantasy look for daisies, pansies, gardenias, poppies and more. These flowers look amazing on cakes.
In the second hour, Judi switches to gumpaste for a finer, more real looking type of ribbon embroidered flowers that were so popular in the early part of the last century. These sown ribbon flowers were used so beautifully on clothes, purses, hats and even shoes. She was introduced to these flowers at a class given by Betty Van Norstrand after they had judged the River City Confectioners Cake Show and was intrigued so much by them that she started researching for more information and now is premiering her new designs in Florida. Some of these delicate flowers only require a circle cut of gumpaste to secure the ‘ribbon’ in place, the rest are just manipulating the shape of the ‘ribbon’. Because gumpaste is used there are some ribbon flowers that can be wired for fillers like the fuchsias shown. This is all basic fondant and gumpaste that all skill levels can do. It’s just the techniques that make them look difficult, but they are not



Class 3. Fashionable Fondant Cookies
You could fill your closet or you tummy with these fun cookies that look like clothing. Judi introduced her
“Cookie Couture” fashion show at the St. Charles ICES convention and has gone on to design more ‘clothes’ for hungry fashionistas everywhere. With the right cookie cutter and a little rolled fondant, let Judi show you some really fun clothing inspired cookies for any occasion. You can make very simple designs or very elaborate designs, depending on how much you want to charge for your cookies. Even if you only work in buttercream, this is a great technique to know because these designs can also be put on cakes!

Class 4. Brazillian Embroidery and Garrett Frill Fun
Judi was introduced to Brazilian Embroidery by Carol Faxon, an ICES Hall of Fame winner, who is sorely missed by all who loved her and her fantastic classes. You would normally see this brightly colored type of embroidery on clothes, pillows, shoes, purses and even framed as art done with very fine threads in fantastic floral designs. But, since cake decorators tend to use frosting, Judi does her embroidery with royal icing and a #1, 2 or 3 icing tip. By doing curls, coils, pillowing and straight lines you can see the most amazing flowers and leaves that shape. Since the best things about royal is its’ drying time and its’ strength, it lends itself very well to this technique you will see in the first hour of her demo.
While the ‘embroidery’ dries, Judi will show you how to have fun using the very versatile Garrett Frill. She considers the Garrett Frill is probably one of the most under used of tools out there. Yes, you can make the most amazing frills with it for borders and side drapes, but what else? What about adorable baby bibs made lots of different ways or a really quick commercial style carnation that she learned from Ann Pickard from England? If you don’t have one, you will want one after you see what it will do.
After the quick carnation, Judi will show you how to finish off your Brazilian Embroidery with a painted background of fronds made of royal icing. If you are using this technique on a plaque or on a fondant covered cake, these fronds can be painted with a fine brush and airbrush color or gels. These dainty little flowers look great added to a baby bib to make it look embroidered or added to a frill on a cake.

Class 1. "Shoes, shoes, shoes"- Everyone loves shoes.
In this demo, you will learn how to make a variety of shoes, from cute baby booties, cute baby cowboy boots, "crocs" or sandals, and fashionable women's shoes.

Class 2. "Mini princess castle" for the little princess-
In this demo you will learn how to make a fairytale princess castle from pastillage.


This is such an adorable cake for a baby shower.
In this 2 hour demo Judy will show you how to carve a cake into an elephant and cover with fondant.
Judy will also show you how to model the elephant’s bottle and favorite puppy toy.
Carol Webb's Demo's:


Class 1. Fast Drapes, Swags, Stringwork and Pearls
We will be doing pleated fondant drapes with an embossed pattern.Quick and easy (commercial) Stringwork. No piping required.Single pearls will be made using fondant and decorating tips of various sizes .We will also make strips of pearls using ELI molds and swags with a texture embossed.

Class 2. Hats with Cake
Real Texas Cowboy Hat – Elegant Ladies Hats- Kids sports and animal caps all using a speedy production method.

Class 3. Petitfours
Make elegant petitfours using cake, brownie, or cookies enrobed in a delicate layer of candy coating.

Class 1. Faces, Baby's and Fairies
In this class you will learn how to use face molds, to paint the faces, to create a butterfly baby, a safari baby and a flower fairy. This is going to be like having 5 classes in one! Don't miss out.

Class 2.
In this class you will learn what judges look for at cake shows and get tips on how to do better at the shows. Then you will learn how to display flowers on cakes. Learn how to arrange a beautiful spray safely, how to hide mechanics, etc.

Class 1. The Cake Critic 101: The Essentials of Good Dessert
This class is designed for the professional baker as well as leisurely home bakers who simply enjoy baking and creating fine desserts for friends and family. It includes the basic dessert types, equipping a kitchen, quality ingredients, presentation, and the importance of taste. Whether you are a professional bakery or only bake occasionally; there is something in this workshop for you. Every attendee will receive a complimentary copy of The Cake Critic Survival Guide. Come spend an hour with The Cake Critic in an entertaining yet educational interactive workshop.

FREE Kid's Corner:
This interactive feature of the cake competition is designed to encourage youth up to age 17 to experience cake decorating. This is a free hands-on activity where the participant will be provided icings and fondant, as well as tools and other accessories to decorate a cookie. This will be a great introduction to the world of sugar art to young visitors who have not had any experiences with cake decorating and a great means of expression to some who are familiar with it!

Tammy Griffin-Vincent

After graduating from Art Center College of Design in Pasadena, CA in 1988, and earning her Bachelor of Fine Arts Degree in Professional Photography, Tammy moved to Ocala in 1991 and started her career as a portrait photographer. She quickly realized her true calling as a specialist in children’s portrait photography.
In 2006 Tammy earned the prestigious Florida Degree of Photographic Excellence, the Florida Education Degree and the Florida Service Award. In 2009 she earned her Master’s Degree of Photography from the Professional Photographers of America. She was recgonized as National Photographer of the year in 2009 as well. Tammy currently serves on the board of the MCA (Marion Cultural Alliance) bringing art awareness to our community but dosen’t stop there.
Tammy has a quiet residential studio located in the rural area of Ocala just outside the city limits. Little ones love to visit and get photographed, going home with a toy from her treasure chest of goodies–if they were good! Her attitude is 'the image must speak to her clients’ and location is the first consideration, whether it be at their home, the beach or other location that portrays the story of their family.
